A real authentic Dutch meal using a vegetable that is seldom cooked here; wonderful witloof or Belgian Endive!  Most people use it for salads for the slightly bitter bite it contains, but braised it turns an ordinary supper into a veritable feast.  Come and learn how and enjoy one of Holland's most famous meals; this may also appeal to all vegetarians as well as there is no meat involved altho it is served with hard-boiled eggs.

Like fish?  This one is so authentic Portuguese you will swear you flew to Lisbon! Seriously this dish was eaten by my husband in Lisbon and he raves that it was THE BEST he has ever had; we researched and found the recipe; it is simply loaded with several different types of fish and includes calimari as well.  I'm beginning to drool, so will stop here; come and see how the Portuguese do it; I will make sure the bread machine cooperates and turns out a crusty loaf to soak up all that juice!

Cha Gio or Vietnamese Spring Rolls

These golden, flaky spring rolls came out very successfully in January and I'd love to show you how!  The filling was easy to assemble and my version contains crabmeat and ground chicken - a moist and juicy mix with fresh veggies inside as well.  I have to say they were as golden and delectable as any we have had at the local restaurants; it's just a simple wrapping procedure, chilling, and then frying quickly at the right temperature!  Come and see...I have chopsticks!
