So it's almost Christmas and of course one has to make shortbread, oui? So I figure that getting out the authentic Scottish cookbook (purchased in Edinburgh yet) would naturally have the best recipe. I read it and it seemed that 8 cups of flour to only 1 cup of butter was a bit odd, but I tried it! Well! Do you really think this all came "together"? I had flour all over the baking board and bits & pieces of butter flipping off onto the floor which wasn't all bad because Dancer came along (smelling the butter) and cleaned up the floor! What to do? Get water! I poured in 1 whole cup of water and it finally came together; perish the thot of kneading or rolling...I squeezed it together and baked it as per directions. In two hours it was not done so I lowered the oven to 200 deg. and baked it 2 more hours. We now have sugar-coated dog biscuits and Dancer is happy as a pig in mud! There's also a "melting moments" recipe in the book as well, but I'm dead-afraid to try it! Happy Xmas baking! Onward to the Dundee cake!
Several days ago I received quite happily 2 large glass containers of real (raw) cream given by a nabor who said he could not handle the calories! I got out my handy cheese recipe, went at it, and got almost 250 grams of the most delicious cheese imaginable! Added garlic powder, dill, cilantro and pepper along with the salt and then added a sprinkling of turmeric in the milk. It is a golden yellow color and delectable. Hope some of you will come to my cheese class on Saturday, January 16. We'll be doing goat and Russian cheese.
